La Union Colombia
A washed, Huilan microlot produced by Edinson Capiz Vargas on his farm, La Unión. Edinson is a second-generation coffee producer who developed a deep connection to farming from a young age. At age 30, with the support of his parents, he acquired Finca La Unión, a 2-hectare farm where he cultivates 1.2 hectares of Castillo variety coffee at 1800 meters above sea level. The farm is located in Villa Viciosa, Guadalupe, Huila, Colombia. Despite facing challenges brought on by climate change, including extreme heat and infestations like coffee borer beetle (broca), Edinson remained committed to improving his production. Seeking guidance from an agronomist, he adapted new farming practices to enhance the quality of his crops. With his wife and two children, Edinson has also been able to build a new home on the farm, securing a future in coffee production for his family.

The main harvest at Finca La Unión takes place between October and November, with a second harvest (mitaka) taking place between March and April.
Cherries are harvested manually. Edinson employs 1 permanent worker and 6 seasonal pickers during the harvest.
Cherries undergo a 24-hour fermentation process in an uncovered lined tank without water, followed by 12 days of drying in a parabolic dryer. Edinson continues to refine his methods, aiming to invest in better processing and drying infrastructure to ensure consistent, high-quality coffee.
