They manage their farm with a high regard for nature, keeping most of the old forest trees for shade with minimal clearing to plant the coee, producing a diverse and balanced ecosystem for the coee plants to thrive. Eudis has explained how the traditional Inca methods of agroforestry follow the moon, from the planting of the new trees to their harvest.

The arabica varieties of Typica and Bourbon are highly regarded in the specialty coffee community and are harvested with care in Incahuasi. While this lot consists of both varieties blended together due to their similar flavor profile, they were still harvested separately. This helps with the uniformity of the harvest, and aids the research of each variety for the best results in the cup. There is also a harmony in having several varieties on the farm and weather can change from year to year, with some varieties doing better in dry years, while others thrive in cooler years. But his greatest asset to this diversity is the forest protecting itself from pests, bad forms of fungus, and invasive species of plants.
